    Elaboración de jamonada utilizando mezclas de carnes rojas (vacuno y cerdo) y pescado gamitana ( Colossoma Macropomum)

    The present study is based on the need for new consumption habits of the population of the Region of San Martin, using as the Gamitana living aquatic species in the production of sausages with mixtures of meat (beef and pork) red. Technological tests are developed characterizing the raw and trials of formulation with levels of replacement to 30%, 40% and 50% of Gamitana meat in the mixture, which was evaluated by its chemical characteristics (protein, fat, moisture) and sensory analysis; determining the optimal level of substitution of 40% Gamitana, representing the following formula:-20.92% Gamitana meat. -15.69% meat of beef. -15.69% pork meat. -18.03% fat of pork, etc. Mix that it was subjected to three hours of cooking at 85 ° C for the production of sausages.     Influencia de los factores ambientales en la calidad fisicoquímica y microbiológica de la leche bovina en 03 zonas lecheras de la región San Martín

    The present work of investigation h.ad as aim determine the influence of the environmental factors (temperature, precipitation, humidity, solar radiation) in the physicochemical and microbiological quality of the bovine milk of the zones of the Alto Mayo, Bajo Mayo and Huallaga Central of the Region San Martin. For it samples of milk were gathered for four months in every zone of study and were analyzed to obtain his characteristics of density, acidity, fat, protein, salid total, mesófilos aerobic and numeration of coliformes. For the comparison of averages. Duncan test at 5% was used to compare means, in addition Spearman correlation was performed in arder to determine the degree of association between the variables of physicochemical and microbiological quality of milk with environmental factors. Concluded that environmental factors (solar radiation and ambient temperature) affect the density, fat and thus in the amount of total solids in milk, have clase negative.associations (reverse). The relative humidity and precipitation have clase positiva relationships (d irect) in the values of density, fat and total solids in milk cattle. However these meteorological parameters had little or no influence on the acidity and protein content. Besides environmental factors directly affecting the numbering of aerobic mesophilic, especially solar radiation and temperatura, and in the higher temperatura zone (Huallaga Central), high aerobic mesophilic results were obtained in milk; however numbering coliforms were not influenced by environmental factors.

    Plan de gestión integral del lugar de pesca artesanal Chumía, río Huallaga, del distrito de Chazuta, región San Martín 2020

    La presente investigación tuvo como objetivo proponer un plan de gestión integral del centro de pesca artesanal “Chumía” rio huallaga, del distrito de Chazuta Región San Martin 2020 para mejorar las actividades turísticas con un enfoque sostenible. El presente estudio fue cuantitativo, aplicada, no experimental descriptivo - propositivo. La muestra de estudio estuvo conformada por 136 pobladores del distrito de Chazuta. La técnica utilizada fue la encuesta y el instrumento fue el cuestionario. Los resultados demostraron que, el impacto negativo de la pesca artesanal a nivel ambiental fue alto con 59 %. A nivel social y cultural el impacto negativo fue alto con 55 %. A nivel económico el impacto negativo también fue alto con 58 %. Finalmente, a nivel gobierno institucional el impacto negativo fue alto con 51 %. La propuesta de estudio tuvo como resultado un plan de gestión integral del Chumía, rio Huallaga, Chazuta, de la provincia y región San Martín, cuyo propósito pretende mejorar las actividades turísticas mediante un enfoque sostenible de la pesca artesanal buscando estimular el contacto de los lugareños y turistas con el medio natural.
