Item Cinética de degradación de la antocianina y estudio reológico de jugo concentrado de uva Isabella (visits labrusca)(Universidad Nacional de San Martín. Fondo Editorial, 2016) Arce Saavedra, Thony; Layza Castañeda, Ricardo Raul; Mendiola Cespedes, Anita Ruth; Dominguez Baldoceda, AbilioIntroduction. Grape from San Antonio de Cumbaza has similar sensory characteristics and composition to the black grapes produced in other regions, with a high demand for the regional wine production and as a flavoring for the food industry. The black grape generally provides phenolics, including anthocyanins with antioxidant properties in vitro and probably benefits to human health. Objective. Study the kinetics of degradation of anthocyanins and rheological properties of grape juice. Methods. Thermal degradation of anthocyanins was conducted at 70, 80 and 90ºC for 5, 1 O, 15 and 20 minutes rota evaporator mínimum vacuum pressure. Rheological study was performed with the Brookfield viscometer L VDV - III Ultra at different temperatures and concentrations. This data were adjusted to the Oswald-de-Waelle, Casson and Herschel-Bulkley mathematical models. Results. Anthocyanins and total phenols were quantified. Anthocyanins degradation for the proposed heat treatment was imminent. The rheological behavior produces values clase to Ostwald de Waele model and also a lower consistency index. Conclusion. Grape juice has a high content of total phenolics, highly sensitive thennal degradation, and a fluid type pseudoplastic rheological behavior.Item Estudio de factibilidad técnico – Económico para la instalación de un larvario – Laboratorio productor de semilla de camarón gigante de agua dulce, en la provincia de San Martín(Universidad Nacional de San Martín. Fondo Editorial, 1995) Arce Saavedra, Thony; Mendieta Taboada, Oscar Wilfredo; Zouza Fernandez, RenigerThe seed (Postlarvae) of shrimp giant of water sweet that is produced currently in the country, not meets in quantity or in quality to the market national; more still exist growing expectation for this culture marked by its profitability and the final market. The demand of the market internal is unsatisfied in 21.70 T.M. (48.20), such as shrimp fresh frozen (1994); with the particularity that the demand increases with the growth of production. With the knowledge of the exceptional conditions of water, soil and climate to develop the Canary on a large scale, as a real alternative to displace the Coca cultivation in the forest; and, to determine the real need for seed and partly to satisfy the market, as well as establish technology appropriate for commercial production; the present study which required the installation of a Larvario financial and economic possibility arose. In the region San Martín for 1995 only a 20.25%...
